Southwest Chicken- Quick, Easy, Cheap, and pretty healthy!

So I got this from some random place months ago and I decide to try it! The boys ate it up plus it was easy and good! 

Southwest Chicken

Boneless Chicken Breast (I used 7 frozen chicken tenders because that’s what I had)

1 thing of salsa (about 2 cups)

1 can black beans drained and rinsed

1 can of corn drained 

I added some water to mine, just to make sure it didn’t dry out before I got home!

Dump all the ingredients in a crock pot and I cooked mine on low for 6 1/2 hours and then just left on warm.

When I got home I shredded the chicken in the pot! Now, it said to serve over rice but we were all over the place Beck had swimming and Noah wanted to play outside – I didn’t have time to do the rice. SO, I grabbed some spicy nacho cheese chips for us and cool ranch chips for the boys threw them on the plate topped with the southwest chicken and then topped with cheddar cheese. All of them just kept eating – yes even the 2 and 5-year-old ate it up! It was so good! So we ended up making Southwest Chicken Nachos!

You can serve these over any kind of chips regular tortilla chips, fritos, etc… We just already had the little bags lying around so I used those and that way everybody got to pick their flavor chip and I could watch the proportions of carbs on mine! This is also a great recipe because everybody can pick what they want to put “under” the southwest chicken or if you can just eat it by itself!

If you do use chips instead of rice make sure you eat right after. Don’t let it sit around or the chips will get soggy!

Just a helpful reminder! Sometimes I am not confident but I have to talk to myself and make myself confident. Sometimes I am scared and I have to talk to myself and tell myself it’s okay to be scared but I have to work through that feeling. Get it? WE have to push OURSELVES to be better and become that person we want to be. Sometimes I have to “act” confident even when I am not feeling confident. Then everything starts falling into place! Talk yourself up and don’t let your head think too much!

I use to tell my girls in the classroom this. They would laugh and then one day a group of them came to me and said they used it! A group of 4 went to a football game at another school and the girls were staring them up and down and they felt under dressed so they just stood there awkwardly at the bottom of the stadium. Finally one of the girls said remember what Mrs. G says…..they all laughed and “prissed, as they said” their way right up the stadium. That right there was “acting confident” until the confidence kicked in! I told them to hold their heads high because everybody is pretty is their own way. Some girls have the most thick, shiny, beautiful hair while someone else may have the cutest button nose, another girl may have beautiful eyes and somebody else may have pretty hands, a girl may be really witty or intelligent and that makes them beautiful. I told them to be confident in themselves because there is at least 1 thing that is beautiful in EVERYBODY! It may be hard to find sometimes on certain people but GOD made all of us and so I know that there is SOMETHING beautiful in/on all of us! 

Cherry Lime La Croix

So my new obsession is La Croix water. Earlier in my pregnancy I drank the lime trying to help with nausea and then I got off it because I got so sick and had to go to coke to make me feel better. BUT now I am back on it! I sometimes just need a fizz and this pregnancy I needed a lot of fizz on my stomach. So when I found out I had gestational diabetes I had to find SOMETHING with fizz but no sugars. So I went back to drinking my La Croix and then one day I tried the Cerise Limon “cherry lime” and I was in HEAVEN!!! This new flavor is to die for!! Okay…okay, It is to die for to me! Russ was like yeah its okay BUT it taste wonderful to me because all I had  was water and un-sweet tea for a couple of weeks, this was a godsend! I can have a burger and drink this and it totally satisfies my need for the bubbles!

They have lots of flavors (around 15) – this one is by far my favorite so far!!

They sell at Kroger, Wal-Mart, and Amazon that I know of!

We all have slumps and excuses – stop whining and complaining, we all have reasons why we can’t workout or do this or that – nobody wants to hear it! Talk to yourself and pump yourself up! Get yourself to the gym, NOW!!!

Oatmeal Pancake Time!!!

SO last year on March 22nd I posted this recipe! I wanted to post it again BECAUSE I have been eating these in the morning for breakfast since I have gestational diabetes! I have been making mine without the stevia in them and I top with light whip cream and berries! I also have been putting blueberries in the batter and making “oatmeal blueberry pancakes”. These have helped me get through the mornings! My stomach is kind of uneasy in the mornings so this is like having a pancake without actually having the pancake. The other morning I made Russell some and put half a scoop of protein powder in it. He said he couldn’t really taste the difference, just a touch drier – so maybe if you add one more egg white it will cancel out the protein powder – just another way to get a little more added protein to it! I thought I would re-post this for anybody out there that has diabetes or gestational diabetes OR for any of my “healthy” peeps out there!

Pancakes (where did I get the recipe from? NO IDEA…some fitness/muscle magazine)


3 egg whites

1/2 cup of oatmeal

dash of cinnamon (I add more than just a dash!)

 stevia to  your taste (optional, they didn’t have in the original recipe but I added it to make a little sweeter)


Put it all in a blender to mix. Spray pan with cooking spray. Spread out the batter in the pancake forms. Cook until done! They cook pretty fast!! Much faster than a typical pancake! 

Top with fruit and light whip cream if you want! Next time I make, I am going to try adding a few blueberries to the batter and see how good they are with the berries cooked in to the pancake!

**The key is to spread the batter out when you put it in the pan. They won’t spread on their own and if you don’t spread them they stay thick! Better to thin them out some! I can eat them without the cool whip BUT 2 tbsps won’t kill you and it makes them wayyyy more delicious!

I tripled the recipe and got 5/6 (depending on size you make) pancakes from it.

Calorie wise – check the side of the ingredients BUT  there is 150 calories per 1/2 cup in oatmeal, 17 calories per large egg white and of course stevia and cinnamon zero! I estimated it to be 200 calories for two small pancakes (what one recipe will get you) If you add the light whip cream you need to add the 2 TBSP for 20 calories to it and then however much fruit you put on it! I don’t count fruit in my calories a lot of times though!  I can’t remember how many calories are in the turkey and cheese sausage – Russell is the one who really eats those – I think they may have been 120?!?!?!? Don’t quote me for sure on that! You will have to check that out yourself. I like them but can’t afford the calories a lot of times! AND of course, he can…MEN! LOL

I liked how easy these were to make and healthy! They can get pricey! I was using 9 eggs a day on just 1 day of breakfast so you might not can afford to have these every day!
