Sweet Potato Fries

So I love sweet potato fries!! HOMEMADE!!! EASY AND SO DELICIOUS! Russell made some one night (using Paula Dean’s recipe) and he used olive oil and they were fabulous! So I made them and instead of using olive oil I used melted coconut oil! 

The olive oil does work better but Russell and I both didn’t mind the coconut oil ones at all! I kept a close eye on them because a few of them were getting a little burnt on the outside, the key is not to coat them too much! Which is great anyways because that means fewer calories!! DO NOT OVERCROWD! I did that and the ones in center were a little softer, I like soft though!

Sweet Potato Fries

Ingredients
Olive Oil, for tossing
5 sweet potatoes, peeled and sliced into 1/4-inch long slices, then 1/4-wide inch strips, using a crinkle cut knife
1 tablespoon House Seasoning (recipe follows)
1/2 teaspoon paprika
House Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder

Directions

Preheat oven to 450 degrees F.

Line a sheet tray with parchment. In a large bowl toss sweet potatoes with just enough oil to coat. Sprinkle with House Seasoning and paprika. Spread sweet potatoes in single layer on prepared baking sheet, being sure not to overcrowd. Bake until sweet potatoes are tender and golden brown, turning occasionally, about 20 minutes. Let cool 5 to 10 minutes before serving.

Pulled Pork Sandwich – Will add recipe to blog! Wheat bun, pulled pork, sauce drizzled on top and avocado slaw. and SWEET POTATO FRIES!! These are the ones I made with coconut oil! Yes this looks fattening and it by no means is a fish and veggie but it does help satisfy those times when you just need a big ole’ pork barb -b-q! EASY!
