Wash and cut a head of cauliflower. Put in bowl and mix with 1 TBSP olive oil, salt, pepper, minced garlic. Any other spice/herb/etc.. you would like to add, Rosemary? Thyme? Onions? Spread out on a cookie sheet and cook for 30 minutes on 425 degrees, tossing around a few times. At the end sprinkle some Parmesan cheese or any cheese of your liking and let melt. I used about 2 TBSP of Parmesan for the entire head of cauliflower.
